Handmade relish recipes

The sunny weather arrived quite unexpectedly over the weekend, which caused a wave of last minute barbecues being held all over the country. We know that British weather is famously unpredictable, so it’s important to make the most of the hot weather while it’s here.

This got us thinking about barbecue recipe ideas that are quick and easy, but most importantly taste delicious.

Here are a couple of  quick and simple relish recipes that will make your home-made burgers taste delicious. (Each recipe will serve 10 – 12 burgers).

Hot chilli

Ingredients:

• 100g Red Hot Chilli – trimmed

• 100g Green Hot Chilli – trimmed

• 150g Tomatoes

• 35g White Onions

• 35g Red Onions

• 25g Smokey Barbecue Relish/Sauce

• 15g Sweet Chilli Sauce

• Pinch of Salt

• Pinch of Cracked Black Pepper

Method – Preparation:

1. Start with the chillies by breaking off the stems – it is a good idea to wear gloves when handling chilli

2. Remove the stocks from the tomatoes and cut off the tops and bottoms of the onions and peel.

3. Finely chop all the ingredients and add together in a large mixing bowl

4. All in the sauces and seasoning and mix thoroughly

5. Refrigerate before serving
Method – Serving/presentation:

Use as a dip or as a relish for Hot Chilli Burger

Mexican Salsa

Ingredients

• 150g Tomatoes

• 65g White Onions

• 100g Red Onions

• 100g Sweet Peppers

• 10g Fresh Chilli

• 10g Garlic

• 5g Coriander

• 30g Sweet chilly Sauce

• 5g Ketchup

• Pinch of Salt

• Pinch of Black Pepper Cracked

Method – Preparation:

1. Finely chop the white onions, garlic and coriander and add to mixing bowl

2. Add the ketchup, sweet chilli sauce, salt and pepper and mix thoroughly.

3. Dice the rest of ingredients and tomatoes into small dices and mix into the bowl.

4. Refrigerate before serving.
